SALAD – A KEY TO BETTER HEALTH!

of Public
Health and Louisiana State University Health
Sciences
Center,
eating
just one
salad a day provides even greater health benefits than previously
thought. People who regularly eat salad have considerable
higher
levels of vitamins C, E, B6 and Folic Acid – all key
ingredients in promoting a healthy immune system
while
reducing the risk of obesity, heart disease and chronic
illness such as cancer. Health experts recommend a minimum
of at least 5 to 10 servings of fruits and vegetable per
day. Unfortunately, less than 50% of people meet this
criteria. So what’s stopping many of us from adding more
fruits and vegetables that are essential for our health?

Time –
Many people say they don’t have time to shop or prepare
elaborate meals. However, just remember that you don’t
have to be a gourmet chef to make a salad. Just a few
minutes to prepare and you’re good to go. Consider
bringing an apple, orange or banana as a snack instead of
convenience snacks. While shopping, you can save even more
time if you buy frozen, bagged or canned fruits and
veggies, especially if you only shop once a week. Not only
are they high in nutrition, you can store them for a
longer period of time.

Money –
Most fruits and vegetables are less expensive than we
think. A pound of bananas costs less than a chocolate bar
or a bag of chips! If you add up all the money you spend
on snack foods each week, you would probably have enough
for a weeks worth of fruit and veggies. Eating an orange
is much healthier than a cookie and much less expensive.

Taste –
With all the choices we have of fruits and vegetables,
it’s hard to believe that you don’t like any. Each
vegetable and fruit has its own unique taste whether you
like sweet, spicy, bitter, sour, etc.
The fact of the matter is, you need to
include a proper amount of fruits and vegetable in your diet
for optimal health. The next time you look for excuses
NOT to eat fruits and vegetable, consider these facts:

Low fruit and vegetable intake is a
risk for cancer! The
International Agency for Research on Cancer claimed that
10% of cancer in western populations is due to
insufficient intake of fruit and vegetables.

Fruits and vegetables can save lives!
According to the World Health Report 2002, 2.7 million
lives worldwide could potentially be saved each year with
sufficient fruit and vegetable intake.

By establishing a balanced proportion
of fruits and vegetables in your diet, you are less likely
to get fat! Since fruits and
vegetables have low energy density (i.e., few calories
relative to volume), eating them as part of a
reduced-calorie diet can be beneficial for weight
management.
